Oh Happy Day!

Hello friends!

Secondly, I worked from home yesterday because I had a doctor’s appointment for my shoulder, more on that in a minute, so I decided to make dinner in the crock pot and leave it to cook all day.  Oh man was this one of the MOST amazing meals, EVER. And to top it off it was a weight watchers recipe (7 points per serving).

Cuban-Style Pork and Sweet Potato Slow Cooker Stew

Prep Time: 15 minutes             Cook Time: 7 Hours      Points Value: 7

Ingredients

1 pound(s) uncooked sweet potato(es), peeled and cut into 1/2-inch pieces

1 pound(s) uncooked lean only pork loin, cut into 1-inch pieces

14 1/2 oz canned diced tomatoes, with green chiles

1 clove(s) (medium) garlic clove(s), minced

1/4 cup(s) unsweetened orange juice

2 medium uncooked scallion(s), chopped (green parts only)

1/2 tsp table salt

1/4 tsp Durkee ground cumin, or other brand

1/4 tsp black pepper

1 1/2 Tbsp fresh lime juice

2 Tbsp cilantro, fresh, chopped

Instructions

  • Place potatoes, pork, tomatoes, garlic, orange juice, scallions, salt, cumin and pepper in a 4- to 5-quart slow cooker; cover and cook on low setting for 7 hours.
  • Stir in lime juice and cilantro; cover slow cooker and cook for 5 minutes more. Yields about 1 1/2 cups per serving (including some cooking liquid).
Honestly, my hubby does not like stew at all, you can ask him, but he LOVED this.  He had two servings haha.  We served it over a bit of rice, but you can do it either way. We both have leftovers for lunch, and seriously I cannot wait to have them haha.

Okay so, back to my great news 🙂  As most of you know it has been a rough couple of months.  And I have bit dreading/looking forward to my doctor’s appointment.  I was nervous because I obviously was going to ask her to clear me to run.  We joked, she poked fun at me, but in the end she CLEARED ME TO RUN!!!!  I was so excited, I wanted to run all the way to the gym last night, but I didn’t.  Ha, I waiting until this morning!  I decided to take it easy on my first day back, so I ran 2 miles.  Oh man did it feel good, and the best part is that I could have kept going, and my shoulder feels fine :).  I am on cloud nine.  She also told me that I would be done going to physical therapy by the end of the month.  Although I am sad about not seeing my new friend Tonya, I am happy I don’t have to leave work 2-3 times a week to go to physical therapy.  I will continue to do the workouts on my own, for quite some time, but YAY.  She said that by the end of January (my next appointment), I will be as good as new!  Then I get to start the arduous task of dealing with lawyers and filing lawsuits. bleh.. I won’t worry about that for now.

    Yaaaay!!! Congrats again! I’m so excited for you!! I remember how devastating it was to be derailed by the accident, but now you are back in action. I’m so excited for you!!

    That’s so great! Congrats! I remember when I was finally cleared to run after I hurt my knee, so I know that amazing feeling. Sort of gives you a whole new appreciation for running, right?
